Workflow saving mobile phone number in a weird format (see attached image), not sure why? The workflow also seems to error out when the phone number is not entered in this format: +18033224745 (this was the phone number entered - the number in the image is what was saved to the profile).

Mystery solved. I had the wrong attribute value selected in the 'Person Phone Update' activity (had Person and not Phone). Whoopsie! All seems to be saving correctly now.
Use this as an FYI if you ever encounter this issue yourself to check those attribute values!
